Guest Post: Amy’s Quasi Healthy Cookies

While these cookies still pack a punch in the calorie department, at least you can sneak in some veggies while you're indulging!


Amy’s Quasi Healthy Cookies

Recipe goes a little something like this:

1 cup brown sugar
1/2 cup margarine
1 egg
1/2 cup peanut butter
1 tsp vanilla
1.5 cups Nutri Blend Flour
1/4 tsp salt
1/2 tsp baking soda
1/2 cup chocolate chips
1/2 cup coconut
1/4 cup flax seeds
5 or 6 chopped prunes
1/2 a chopped banana
1 cup grated zucchini.
3/4 cup oatmeal

Preheat oven to 350.

Mix first 5 ingredients in your mixer.

Add dry.

Fold in 'fun stuff'. Mine came out a little 'wet' so I dried it up with some extra oatmeal.

Drop by the spoon and bake for 10-15 mins. DELICIOUS!
