Twice in One Day

Ha.  See this…a second post…and there will even be a third!!  Not that I really have any spare time but I figure I can swing 15 minutes at a time instead of 30 minutes or more later tonight.  :)

The “silent” lunch…ie: lunch that doesn’t make noise during conference call.  :) 

Slice of sunflower flax bread spread with hummus and topped with tomatoes and red onion.  I had intended to add some greens but they’ve gone off since yesterday.  Boooo to wasted produce!!


Some cheese on the side.


Thankfully our call was only 1.5 hours today!  No thanks to me though…I did most of the talking.  haha.  What’s new?  I had work to keep trucking through so made a cup of peppermint tea to tide me through the afternoon and grabbed a Kashi bar to go with it.


Work lasted until 6pm but that’s OK because I think now I’m in a good position for tomorrow when I’ll be taking the middle of the day off to pick up Miss Cat and her lovely man from the airport!!!!!  And then joining Miss Jen and her also lovely man for brunch at Cora’s (welcome to the East Coast girlies!!).  It’s gonna be a heckuva day.  Woooo!

Even though I have a zillion things to do tonight I got the idea to make a quick pot of broccoli-cheese soup.  I’ll admit I was running fast food ideas through my head, but I really didn’t want Subway and the other choices are well…yuck, right?  So time for soup was made in the schedule.

Quickie Broccoli Cheesey Soup

  • Lightly steamed some broccoli and a bit of chopped carrot.


  • In a saucepan, melted 1 tbsp butter and whisked in 1 tbsp flour.  Whisked in bit by bit about 2/3 cup chicken stock (just kept pouring and whisking until happy with consistency). 
  • Added steamed veggies to pot, seasoned with s&p and a sprinkle of cayenne (just to taste).  Drizzled in about 1/4 cup skim milk for some creaminess.  Stirred and pushed veggies to side. 


  • Added 1 heaping ounce of shredded old cheddar cheese.  Whisked lightly and then stirred around the veggies.  Simmered a few more minutes and voila…soup!

Served with some multi-seed crackers for a yummy, comforting dinner.
