Two Outta Three

I think today is going to be a three post day.  Just cuz.  Seems like a Friday thing to do!  That, and I don’t want my evening post to be 3,476,586 pages long!

Sooo…the breakfast cookie lasted exactly two hours on the hunger frontier.  About the same as any bowl of oats for me so I’ll take it.  I look forward to trying different combos in da future.

When my tummy started rumbling, I knew exactly what to make for lunch.  I think I actually dreamt about this last night…but I could be wrong because although I often know I’ve had crazy dreams I never actually remember them!

I give you a genius creation *pats self on back*Apple, Walnut & Brie quesadilla!!


I sliced off a bit of Gala apple


Sprinkled it with a weeee bit of sugar and big dash of cinnamon


And microwaved it for about 30 seconds to get the juices flowing.

Meantime I heated up the Griddler and threw a handful of chopped walnuts on to toast…


And sliced up a wedge of brie


1/8 of the brie wheel = 80 calories!

Spread the brie on one small whole grain tortilla, then sprinkled with the hot nuts <insert childish giggling here>


Laid the apples out on a second tortilla…and placed both on the grill to start heating.  Once warm I slapped the two halves together and closed the grill lid to finish cooking.

Et voila!  Ooey gooey grilled cheesy fruity goodness.  Try this!!  Sooooo effing good.  You’ll be seeing this again.  Possibly for dinner.  :)

As I worked away the afternoon I finally cracked open the bag of Trader Joe’s Roasted Plantain Chips that Elizabeth sent me…

At first bite I thought “meh”, but they grew on me.  Apparently.  Times this bowl by two almost the whole freaking bag.


FH is off having an extended “working lunch” with a buddy and may or may not return before midnight…so my Friday evening is free to tackle those chores I mentioned earlier.  Yes!  Lame I’m sure, but I’m looking forward to getting the living room back in order!

Om nom that tortilla looks delish! Now you've got me wanting to make a healthified quesadilla or bean burrito; YUMMMMM!

I'm not really doing anything tonight. Back to school tomorrow, and not seeing DBF tonight as we're trying to ease ourselves back into the long-distance routine. Blech.

haha... I don't eat brie, but the picture still made my tummy grumble!

I've used those ingredients for a grilled cheese (with fancy bread) but never thought of wraps. Yum!

What a great idea for a quesadilla! Ahhh Jamie, you're a genious sometimes....ok all of the time.
I love the idea of the breakfast cookie. Looks amazing! I'm going to give that one a try this weekend!
